1 Chicken It is better that the chicken weight between 800 to 900 grams
¼ cup Brewed Saffron
200-250 g Butter
1 Onion
4-5 grains Garlic
½ cup Lime Juice
½ cup Pomegranate Sauce
As needed Salt, Black Pepper

First you need to skin the chicken and wash it. Cut the chicken in half; and if you want, you can cut the wings as well.
Now you need to marinate the chicken. For that, put it in a large bowl. Cut up the onion and add it to the bowl. Peel, chop or crush the garlic grains too and add them to the bowl with the black pepper. Depending on your taste, you can use red pepper instead of black; but the original recipe has black pepper.
Add the saffron for a better taste and color; and then add the lime juice, which will make the meat more tender and delicious.
Now mix all the ingredients in the bowl with your hand well. Cover the top of the bowl and leave it in the fridge for 12 to 24 hours.

When the oil is hot, place the chicken parts in it and after a while (when the chicken color changed) put the pot’s lid on and lower the heat as mush as possible. The chicken should cook like this for 25 to 30 minutes. But do not forget to flip the chicken.
When only a few minutes is left for the Chelow (or rice) to be ready, add the salt to the chicken.
Melt the butter and when the chicken is completely fried, stir-fry it for 2 or 3 minutes with butter for an amazing taste.
Now the chicken is ready to be served with (saffron) rice and of course, pomegranate sauce. One of the reasons that Akbar Joojeh is served with pomegranate sauce is frying the chicken in high amounts of oil. Akbar Joojeh has a very delightful texture and taste, Enjoy!
